Carnaroli is a traditional Italian rice, different from ¾Arborio rice due to its higher starch content, allowing for a firm yet creamier risotto. It keeps its shape better than other forms of rice during slow cooking because of the high amylose content, allowing for a perfect al dente yet smooth risotto texture.¾
